Uno de los factores en com\u00fan para ambos casos es el momento de la cosecha. En el caso de la uva en fresco, adem\u00e1s es fundamental la sanidad del vi\u00f1edo, la limpieza de los racimos, el preenfriado, el embalaje y la absorci\u00f3n de di\u00f3xido de azufre (SO2).
